Peach & Cottage Cheese Cinnamon Kugel

(1/3 kugel: 68 calories, 0.5g fat, 172mg sodium, 9g carbs, 2g fiber, 6g sugars, 8g protein = 1 Point)

Fruity, noodle-y yumminess!

Ingredients:

1 package House Foods Tofu Shirataki noodles; Fettuccine Shaped

1 large peach; cut into bite-sized pieces

1/2 cup fat-free cottage cheese

1 tbsp. Splenda

3 tbsp. egg whites

Cinnamon; to taste



Directions:

Preheat oven to 425 degrees. Drain, rinse, pat dry and cut Shirataki noodles. In an oven-safe baking dish combine noodles, egg whites, Splenda, peach, cottage cheese and cinnamon; mix well. Bake in oven for approximately 25 minutes, or until firm. Enjoy this peach-tastic, cinnamon-y goodness!


** HG Tip! For all Shirataki recipes, be sure to drain and rinse noodles well, and pat very dry. Also, prep noodles by cutting them up a bit to control their unwieldiness.

  • I have actually made this one ... but the recipie is slightly different in the book (fat free cream cheese and egg substitute in mine). I liked it cold rather than hot.

    I've made this as is using organic white peaches. It was very tasty, except for the fact that it was a little wattery. Yummy flavor, though! Thanks for sharing!
