This was just posted to my Facebook and I thought I'd share.

Today is National Chocolate Pudding Day! (Like we needed another reason to celeb...rate chocolate.) Here's our favorite recipe for a creamy, rich, smooth, dairy-free chocolate pudding. Enjoy!

3 Tbs all-purpose flour
3 Tbs evaporated cane crystals (or favorite dry sweetener)
2 Tbs unsweetened cocoa powder
1/8 tsp salt
2 cups So Delicious Coconut Milk Beverage (favorite flavor—if using chocolate, delete 1 tablespoon cocoa)
1/2 tsp vanilla

Whisk together flour, sugar, cocoa powder and salt in a small saucepan. Add coconut milk and turn up heat to medium. Stir continuously until pudding begins to boil. Reduce heat, continue stirring and simmer for 3-4 minutes until pudding starts to thicken. Remove from hit, stir in vanilla. Pour into individual serving cups and serve warm or chill for at least 2 hours. Pudding will continue to thicken as it cools.See More

    Totally saing this! I eat chocolate pudding EVERY night as my treat. But I just have the jello sugar free fat free and I'm trying to cut out artificial sweeteners. Would love a clean low cal pudding! Thanks!

    Just made this using chocolate protein powder instead of cocoa powder...using less sugar. Tasted great:)
