Super Moist Pumpkin Bread

Serves 8
1/2 stick unsalted butter
1/2 cup sugar
1 large egg
1/2 cup canned pumpkin
1/4 cup nonfat, plain yogurt
1/4 cup honey
1 tsp vanilla extract
1 cup flour
1 tsp baking powder
1 tsp cinnamon
1/4 tsp salt
1/4 tsp ground ginger
1/4 tsp pumpkin pie spice
Preheat oven to 350. Spray a bread pan with nonstick cooking spray. Using an electric mixer, beat the egg and sugar until creamed. Then, mixing on low speed, add the egg and combine. Then add the pumpkin, yogurt, honey, and vanilla until smooth. In a separate bowl, combine the flour, baking powder, cinnamon, salt, ginger and pumpkin pie spice. Fold this into the pumpkin mixture and combine until smooth. Pour into prepared pan and bake 40-45 min or until toothpick comes out clean.
