Does anybody have the recipe for the WW 1 point pumpkin muff
I have no idea how many calories they were, but you were supposed to be able to eat 3 of them for 1 point. They were super moist ... almost sticky ... I think they were mostly pumpkin and egg substitute, but they didn't have artificial sweetener in them.
I seem to remember liking them and I need something different for breakfast pretty soon. I'll dig around in my old WW stuff to see if I can find the recipe, but thought I'd ask here too!

Weight Watchers 2 Point- Pumpkin Muffins
1 (18 ounce) box spice cake mix
15 ounces pumpkin
1 cup water
Directions
1 Mix all ingredients in mixer.
2 Makes 24 muffins.
3 Cook for 20-25 minutes at 350°F.
4 They will be very moist.

Oooh ... those sound yummy, but that isn't the recipe I remember. I think it was all from scratch ... no cake mixes or anything. And I think it had raisins in it too. Hmmmm. I'll have to try these, though ... thanks!!0 -
I think I just found it! This one has sweet-n-low in it and is 6 muffins for 1 point, but I think the recipe I had was 3 muffins for 1 point and had brown sugar in it.... I'll have to figure out how much. I'll work on getting the nutrition information for these later on ... I'm procrastinating from work right now!!

1 tsp. cinnamon
1 tsp. baking soda
8 pkgs. Sweet 'n Low (NOT EQUAL)
2 eggs
1 tsp. vanilla
2/3 c. dry milk (powder)
6 tbsp. flour
1/2 c. grated carrots
4 tbsp. raisins
Mix dry ingredients together. Combine eggs and vanilla. Add pumpkin. Combine with dry ingredients and mix well with mixer. Stir in carrots and raisins. Pour in muffin pan sprayed with Pam. Bake at 350 degrees for 15 minutes. Makes 12 muffins (6 muffins = 1 serving). Each serving = 1 milk, 1 protein, 1 bread, 1 vegetable and 1 fruit.0 -

I had a son with an egg allergy and found out that 1/4 c yogurt (plain or vanilla) replaced 1 egg in most cookie, muffin and quick bread recipes.0
