So I have chicken in the oven and im looking for some healthy low carb low calorie recipes, does anyone know any?

    I love making a "pizza chicken." Pound the chicken pretty thin and then cook it in the pan just long enough to brown it, put it on a cookie sheet and top it with pizza stuff, onions, mushrooms, turkey pepperoni, low fat white or red sauce, all that kind of stuff and a little bit of cheese and cook it until the cheese is melted. This is totally my go-to dinner when I have chicken in the house!

    I have a great one, but you cant do it with chicken that is already cooked. You cut boneless skinless breasts into chunks. Season liberally with original Mrs. Dash. Cook in an electric skillet with a little olive oil. Near the end, add coarsely chopped onions. Cook until the onions are almost done. Add soy sauce and cook until the meat is a nice brown. THis is soooo good and very low in carbs. My husband is on a low carb diet and he loves it when I make this. Sorry I cannot give exact times or measurements. I just eyeball it. It always turns out great. Make sure you use Mrs. Dash or other salt free seasoning. The soy sauce has a lot of sodium.

    take 2 chicken breast flatten out coat in 2 tsp plain flour and seasoning. fry in fry light for 2 mins each side remove from pan. add one chopped red onion and 4 sticks finely chopped celery to pan for 2 mins add 200gr halved cherry tomatoes cook till softened. add 1 tbsp red wine vinigar and 1 tsp soft brown sugar cook for another minute add chicken back to pan till cooked through. serve with a generous helping of flat leaf parsley. serves 2... yum yum x
