Hey guys!

Right now in Walt Disney World (my favorite place on earth)
they are celebrating in Epcot with the International food and wine festival!!!!!!

We are usually there for it, but we went to WDW in August this year so we are missing it :cry:


But all hope is not lost. I am having my own international food and "water" festival right here at home!

And tonights featured country is....MEXICO!!!


On the menu this evening is:

Cantina Chicken Ole' w/ Tortilla Chips

Serves 2

Ingredients:


* Chicken Breast, no skin, 2 breast, bone and skin removed
* Low fat cream cheese, 1/2cup
* Jalapeno Peppers, .1/4cup, sliced
* Banana Peppers, 1/4 cup
* *La Tortilla Factory - Fat Free Tortilla, 2 serving
* *Pace Chunky Salsa - Mild, 6 tbsp
* Yellow Sweet Corn, Canned, 1/4 cup
* Beans, black, 1/4 cup
*Pam cooking spray

Directions:

Pound chicken breasts into an even thickness. In a mixing bowl, beat cream cheese until smooth and add salsa, jalepeno's, bananna peppers.

Place 1 heaping spoonful of mixture on each chicken breast and roll. Place seam side down in shallow baking pan. Add to the remaining salsa mixture the corn and black beans. Pour mixture on top of chicken rolls. Bake uncovered at 350 degrees for 50 minutes.

For the tortilla chips:

lightly spray both sides of each 6" fat free tortilla

lightly salt and pepper

Bake at 350 until golden brown....about 7-10 min...watch these very closely!

    I was just there! Had a salad in Mexico! And it killed me the rest of the week!

    The food is soooo yummy! I love the small portions too...makes me feel a bit better about stopping every 5 feet to eat! lol
