Carrot & Sweet Potato Soup

Just thought I would share my own homemade recipe I made up :happy:
You will need:
1 Medium - Large white potato
3 Medium sweet potatoes
3 Medium- Large carrots
1 Large white onion
1 clove of garlic
1 vegetable stock cube
tsp onion seeds
tsp tumeric
tsp cumin
tsp chilli flakes
tsp ground coriander
tsp coriander leaf
Peel and chop potatoes and carrots and boil until tender. In a separate pan gently soften the onions and garlic with the herbs and spices (use as little or as much of the spices as you like to your own taste).
When the veg is ready do not drain off the water, add a vegetable stock cube and the spiced onions. Blend all ingredients with a stick blender until you get the consistency you prefer, add more water if necessary and salt and pepper to taste.
Serves 6 Cals Per Serving = 130 approx
The soup can be portioned into tupperware and left in the fridge for a few days or frozen until needed.
This is a really filling soup, I serve it with a couple of crackerbreads (20 cals per slice)
