Road Trip!

I'm going on a 16-hour road trip. I will leave Friday evening. When tracking calories, do I count my day from when I wake up until I go to sleep? Or do I track it from midnight-midnight? I won't be sleeping until 10am the next day, so It will significantly throw off my eating habits. Also, what kind of snacks can I bring that aren't high calorie and won't require me to bring a cooler? I don't want to give in to the fast food drive thru at 3am. Suggestions?
