HELP!!! The Chicken's overdone!!

I just fixed a chicken, mushroom and rice casserole, and the rice is not done. Does brown rice take longer to cook? Can you cook it some before putting it in the casserole. Does anyone else know how to adjust a recipe using brown rice vs. white??? HELP! The chicken is going to be overdone if I let it cook longer!! :laugh: :sad: My dinner!

Yep, long grain brown rice usually takes about 45 min to cook. If I am using it in a casserole like this, I cook it first for about half an hour and then put it in the cassserole .0

If the chicken is in big pieces, you could take it out and cover it in foil while the rice cooks. I had this same problem when using brown rice in a casserole.0

Haven't had much luck using brown rice in casseroles. It is either very crunchy or soo mushy/sticky. Good luck!!!0
