Protein Black Bean Brownies
I'm making these today, let's cross our fingers they're yummy!
Serves 8
Ingredients:
1 can black beans
3 eggs
1/2c butter
4Tbs coco
1 cup dates
1tsp vanilla
3 scoops protein powder (mine has 30g/scoop, adjust macros appropriately)
pinch of salt
Directions:
Rinse Beans
Add beans and other ingredients to the bender, blend to the consistency of brownie batter.
Kitchen tip- To soften the dates, so that they blend well, put in a small sauce pan. Add just enough water to cover, and bring to a boil. After about a minute of boiling, the skins will start to split, and they will be soft. Drain water and and they will blend smoothly.
Addition ingredients: Once the batter is mixed, you can add lots of goodies! Fold in some dark chocolate chips, or shredded coconut! Or you can add half a block of cream cheese for marbled and higher protein brownies!
Make a parchment sling for an 8x8 pan, pour in batter, and bake @ 350 for 30 minutes, or until a toothpick comes out clean.
Cutting: For perfectly cut brownies, but the tin in the freezer for 2 hours, after baking. Lift the parchment cradle out of the tin, put on a cutting board and use a pizza cutter to get straight clean lines. Rinse cutter with warm water if it starts to grab the brownies

These are protein packedBut you could use Ener G, and earth balance, and a vegan protein.
