Corn Salsa! 13 calories per serving!

Okay folks! So this is probably the healthiest stuff I have ever made in the history of the world. Here goes:
2 green bell peppers
2 red bell peppers
1 yellow bell pepper (these are the expensive ones, so I usually only get one)
a big handful of cilantro
15-20 sliced jalapenos from a jar or chop up some fresh to avoid the sodium that comes with the jarred, but monitor closely for heat!
2 limes
1 can of yellow and white sweet corn
1 medium red onion
Chop up all peppers, cilantro and red onion as fine as you like. Mix in corn. Mince 15-20 slices of jalapenos and add a couple splashes of juice from the slices. Test for hotness, and add more if needed. Cut limes in half and squeeze over salsa. Mix it all up and refrigerate for a couple hours for all the flavors to mesh together.
The recipe makes A LOT of salsa. I'm not entirely sure how many servings it is...but the whole big bowl is around 400 calories, so my guess is it makes 32 servings at 2 Tbsp each.
I used this salsa in the following recipe last night:
2 8-inch flour Tortillas - 280 calories
1 packet Wholly Guacamole - 100 calories
4 tablespoons Corn Salsa - 26 calories
1/4 cup mozzarella cheese - 80 calories
2 pieces boneless, skinless chicken tenderloins - 110 calories
Two really tasty, medium-sized burritos - 596 calories
I'm sure you can find healthier versions of the tortillas, cheese or maybe even just use avacado instead of the Wholly Guacamole! Plus you burn a lot of calories dicing all those peppers and squeezing those limes! LOL!

Ooh, sounds yummy. I have been buying the fresh black bean and corn salsa from Wal-Mart. This sounds delish. May just have to try it for this upcoming weekend.0

Also! I just tried this as a "chicken fajita salad" and it was amazing. Just replace the tortillas with a bowl full of lettuce, add some frank's red hot and a little chobani non-fat greek yogurt (which tastes a lot like sour cream to me) and it was superb! Might be my meal for the week with how much salsa the recipe made!0
