Freezing meals

I work all the time, so I rarely have time to cook during my week. I would love to be able to take my one day off to prepare, portion and freeze individual meals so when I only have 10-15 minutes to make my food, I can still have something homemade and healthy- cheap would be nice too :happy: Anyone have any good recipes for freezing?

I love love love the books Don't Panic, Dinner's in the Freezer and Don't Paniic, More Dinner's in the Freezer. I spend 2 days and cook/freeze a months worth of dinners a head of time.
A great trick is marinates. Make a marinate, portion out meat and freeze. The marinate penetrates the meat as they thaw.0 -
I made a big crockpot of turkey chili the other night and froze it.0

Soups are awesome things to freeze. You have to be careful with ones containing mushrooms or potatoes. Another thing that freezes great is chili. Something else I have done is taco meat and pasta sauces.0

I freeze everything, I blanche veggies like beans and asparagus and freeze them, also healthy sauces...I freeze Chimichurri, besides being my boyfriends favorite, it's low calorie and delicious on everything! I use it to spruce up skirt steak, chicken, pork, veggies, rice, etc. It thaws to room temperature pretty quickly too!
(sorry I know those aren't full meals, but hope it helps! I would venture to guess you can freeze a lot of the meals you're currently making!)0 -
I make chili and I'll make breakfast burritos and freeze them, some of it's trial and error though, like the breakfast burritos, you have to let them cool completely before you wrap them up so the heat doesn't cause moisture and make your food slimy yuck!!0

I roast or grill chicken breasts then slice, portion and freeze. I've also done extra lean beef patties the same way. They chicken is great in wraps or in other recipes. Most any soup or stew will freeze well--I do an all bean chili that I think is better after freezing. You are SO on the right track by wanting to prepare your own food!0

Soups, chilis, most Indian food, pancake/waffle batter, Spanish foods... honestly most things freeze really well. Just avoid freezing fish, it doesn't turn out so well.0
