Tonight I tried a new recipe from our
Taste of Home Diet Comfort Food Cookbook
and it was AMAZING!!!
I thought I'd share it with y'all so you could enjoy it too!! So, ENJOY
Southwest Pasta Bake - pg. 224
8 oz uncooked penne pasta
8oz fat-free cream cheese
1/2 cup fat-free milk
10 oz frozen spinach; thawed and drained
1 tsp dried oregano
1 lb lean ground beef
2 garlic cloves; minced
16oz picante sauce
8 oz no-salt-added tomato sauce
6 oz no-salt-added tomato paste
2 tsp chili powder
1 tsp ground cumin
4 oz shredded reduced-fat cheddar cheese
2-1/4 oz sliced ripe olives
1/4 cup sliced green onions
1. Cook pasta according to package directions. Meanwhile, in a small bowl, beat cream cheese until smooth. Beat in milk. Stir in spinach and oregano; set aside.
2. In a nonstick skillet, cook bek and garlic over medium heat until meat is no longer pink; drain. Stir in picante sauce, tomato sauce, tomato paste, chili powder, and cumin; bring to a boil. Reduce heat; simmer, uncovered for 5 minutes. Drain pasta; stir into meat mixture.
3. In a 13-in. x 9-in. baking dish coated with cooking spray, layer half of the meat mixture and all of the spinach mixture. Top with remaining meat mixture.
4.Cover and bake at 350 for 30 minutes. Uncover; sprinkle with cheese. Bake 5 minutes longer or until the cheese is melted. Sprinkle with olives and onions. Let stand for 10 minutes before serving.
Yield: 8 servings
Nutrition Facts: 1 serving equals 328 calories, 9 g fat ( 4 g saturated fat), 40 mg cholesterol, 855 mg sodium, 36 g carbohydrate, 4 g fiber, 25 g protein, DIABETIC EXCHANGES: 3 lean meat, 2 vegetable, 1-1/2 starch.
