Dog & Slaw Lunch Box (290 calories w/pic)
I used to hate coleslaw. But I know how good cabbage is for you so I've been trying and trying to make it in a way that I like. Store bought coleslaw is way too high calorie and usually either too sweet or too tangy for my taste. All my past home made coleslaws have been disastrous for flavor. I just couldn't find a recipe that was mild, clean and tasty. So finally, I just made one up. And I got it right on the first try! So my favorite coleslaw recipe made it into this lunch box.

2 Servings (1 pictured) | 290 Calories ea
2 cups Cabbage, shredded thin
1 Medium Carrot
1/2 Tbl Extra Virgin Olive Oil
1 Tbl Rice Wine Vinegar
1/2 packet Stevia Extract in the Raw
Salt & Pepper to taste
10 Black Olives
1 cup Green Grapes
16 Grape Tomatoes
1 Tbl Light Ranch Dressing
1 cup Broccoli
1 Tbl Butter
1 tsp Sunflower Seeds
1 tsp Garlic, minced
2 Hot Dogs (Oscar Meyer 98% Fat Free)
2 Hot Dog Buns
Condiments
Toss together cabbage and carrot. Whisk together oil, vinegar, stevia, salt and pepper. Pour over the cabbage and toss to coat. Add to the boxes and top with olives.
In a small bowl, add broccoli, butter and garlic. Microwave for 1-3 minutes or until broccoli turns bright green. Divide into separate containers, top with sunflower seeds then add to the boxes.
Cook the hot dog according to package instructions, put inside the bun and add condiments. Add to the boxes. Add remaining ingredients to the boxes.
Make sure you let everything cool thoroughly before closing the lid on the boxes to prevent spoiling.

Looks great! The only thing missing is a 100% whole wheat hot dog bun!0

looks awesome, but sodium is what i worry about..the hot dog has got to be high in it..i dont care so much about cals, because they are easy enough to gain back, and sodium, not as easy..glad you found something that works for you tho :drinker:0

Yeah I had switched to whole wheat buns a couple weeks ago but I was sick this weekend so my husband did the shopping. He just picked the cheapest hot dog bun option. ~_^0 -

According to MFP the whole box has 750 sodium. For me that's acceptable since the rest of my day I do pretty good. I usually try to keep the sodium for one meal between 500-800 sodium. Too much sodium is bad, I agree there, but the body still does need it's salt.0
