Does anyone have any healthy recipes for a slow cooker? With my husbands and my schedules during the week, it really is the best way for us to feed our family a good meal at a decent hour during the week.

  • I know what you mean about the slow cooker.
I do alot of chicken with carrots. Beans with salt pork. 15 bean soup. Split pea soup with ham. Roast (beef or Pork) with carrots and potatoes. Corned beef and cabage. Chicken noodle soup. What about fish with a salad and maybe rice and vege's total time from prep to table about 30 minutes. How about soup and salad. What about Gumbo with shrimp. Turkey burger's with pork and beans. If I can remember any more I'll post them. Have a great day!

My favorite recipes is Crock Pot Spaghetti.

(sorry-I never measure when I cook so I'll estimate. Feel free to adjust as you see fit)

Chop whatever veggies you like for spaghetti sauce-an onion, a green pepper, some mushrooms, shredded carrots, chopped zucchini, etc. Add to Crock Pot with a jar of spaghetti sauce. If I don't want a vegetarian sauce, I'll add a pound of cooked, drained, extra lean ground turkey. Cook for several hours on high until the veggies are soft.

I know this sounds weird, but add a large 32 oz. can of V8 juice along with a half box of whole wheat or Barilla plus spaghetti. Cook until the pasta is done-really only takes about 20 minutes or so.

The flavor from the sauce is sucked up into the pasta. Top with cheese and serve.
  • I actually have like a weight watchers cookbook for a crockpot that someone found me. I am going to try and find the link for you. Its a huge book too.
  • sorry every time I try to put the recipe in...my puter acts weird. Found the recipe on the recipe calculator site.

There is a recipe calculator site???
  • There is a recipe calculator site???

    Yes - www.sparkpeople.com

You enter in all the ingredients for your recipe (the Food Search is exactly like the one here, so it's very easy to use), how many servings it makes, and you can even list all the directions for the recipe and share it with others on the site! Once you enter the ingredients, it will calculate the nutritional information for you, and you can save it for later use. I enter the recipe there, and then I use the nutritional information to enter a personal food on this website to track it.
  • I almost forgot - I like to use www.eatingwell.com for receipes. You can search specifically for Slow Cooker/Crock Pot recipes, plus the site is designed with healthier eating and healthier living in mind.

    BUMP!!

    More crockpot recipes please? :flowerforyou:
  • My all time favorite slow cooker cookbook is "Fresh from the Vegetarian Slow Cooker" by Robin Robertson...I just picked it up at the library at one point. So, i'll just post one of my favorites. Even though it's all vegetarian there's some great veggie side dishes and just some tasty stuff.

Half-Day Ratatouille (easy and pretty low on the calorie count)
    2 tbls olive oil
1 sm. eggplant, cut into half inch dice
    1 sm. yellow onion, diced
1 sm red bell pepper, half inch dice
    2 garlic cloves
2 sm zucchini, cut into half inch rounds
One 28 oz can diced tomatoes
    1 teas dried thyme
    salt and pepper
    3 tbsn pesto

heat 1 tbsn oil in large skillet over med heat, add eggplant, stirring until softened, about 5 minutes. Transfer to slow cooker.
heat other tbsn oil in skillet, add onion, cover for 5 minutes. Transfer to slow cooker. Add the remaining ingredients except for pesto. Cover and cook on low for 4 hours.
Stir in pesto just before serving.

This one is easy but the timing is short so it's a little tough sometimes. I usually serve it over some polenta, brown rice or with some crusty bread. this is supposed to serve 4-6, so the calories i came up with are 160-240.....hopefully my calculating was right.

    Enjoy
