    Cole slaw! Use vinegar, oil and just a pinch of sugar instead of mayo. Add some cilantro and shredded carrots. YUM!

    Black Bean and Corn Salsa



    *This is for a big party bowl you can cut it in half if you need to*



    Ingredients

    1 (15 ounce) can yellow corn, drained*
    1 (15 ounce) can white corn, drained*
    2 (15 ounce) cans black beans, drained and rinsed
    1 (14.5 ounce) can Italian-style diced tomatoes, drained**
    1 bunch finely chopped cilantro
    5 green onions, finely sliced
    1 small red onion, finely chopped
    1 red bell pepper, seeded and chopped
    1 tablespoon minced garlic
    1/4 cup lime juice
    1 avocado - peeled, pitted, and diced
    2 tablespoons olive oil, or to taste
    cumin powder to taste



    *I used 2 cans of Del Monte mixed yellow and white corn.

    **I used 2 fresh medium tomatoes, seeded and pitted. And then added two cans of Rotel because I like a little more tomato flavor to mine.



    Directions

    Stir the yellow and white corn, black beans, tomatoes, cilantro, green onion, red onion, bell pepper, and garlic in a large bowl. Gently mix in the lime juice and avocado. Drizzle with olive oil to serve.

    Peach Jello Salad

    lg. box of sugar-free peach jello
    lg. container of low-fat cottage cheese
    container of Cool Whip free
    lg. can of peaches in juice, sliced into bite size pieces

    Mix all ingredients together, grab a spoon, and enjoy!! Very light and refreshing!!
