Blueberry Pancakes

Hey,

I was going to make these this morning and take a photo to post as well but ran out of time. But I have made these before and they were delicious! The batter makes 1 cup so I used half a cup to make 1 pancake and I have to admit 1 pancake was enough as they are big and fluffy.

Ingredients:

1/2 tsp of Baking Powder
1/4 egg whites
1/4 cup soy milk + extra
1/2 scoop of vanilla protein powder
1/2 cup blueberries
1/4 cup whole wheat flour
1/4 cup rolled oats

Directions:

1. Whisk together milk and egg whites
2. Combine all dry ingredients
3. Add the dry ingredients gradually until all is combined. (add extra milk if you find the consistency too thick)
4. Pour the batter into a measuring jug, measuring out 1/2 cup. Add half of the blueberries to mixture in the measuring cup.
5. Heat up a pan and cook pancakes :smile:
