I am looking for a low calorie and low sodium recipe for broccoli cheese soup. Its my favorite soup and I would have it every day if I could live with out guilt from eating it. THanks

    Here's my "cream" of broccoli soup recipe... I'm sure you could add cheese (sharp cheddar?) to it.

    Cream of Broccoli Soup
    Ingredients
    1 bunch of broccoli
    4 cups water
    1 cube chicken bouillon
    2 tsp. olive oil
    1/2 onion, diced
    4 Tbsp. flour
    2 cups fat-free milk
    1/2 tsp. salt
    ________________________________________

    Cut the crowns from the stems of the broccoli and set aside.
    Peel the stems until the tender center is exposed. Dice the peeled stems. Place them in a stock pot with the water and bouillon on high and boil about 30 min or until tender.
    While the stems are boiling, steam the flowerets until bright green, but still slightly tender. Cool and finely chop.
    Once stems are soft, puree in a blender until smooth.
    Place the olive oil in a stock pot over medium-high heat and add onions. Reduce the heat to medium and cook slowly until soft.
    Add flour and stir until blended.
    Whisk in the milk.
    Add the pureed broccoli stems and half of the chopped broccoli and salt.
    Cook on medium heat for about 5-10 minutes. Blend it again, using a blender.
    Add the remaining finely chopped broccoli flowerets and stir. Cook for an additional 5 minutes and serve.
