Vegan Macaroni and Cheese

Oh, this is sooo good! And so much healthier than traditional macaroni and cheese. Please don't let the sound of it scare you. When I was cooking it, my husband was making the worst faces. I giggled to myself and didn't say a word when he came back for seconds.

Vegan "cheese" sauce

1/2 cup raw cashews
2 cups water
1 4-oz jar pimentos
4 Tbs. cornstarch
4 Tbs. nutritional yeast flakes
1 Tbs. lemon juice
1 Teasp. salt
1 4-oz can diced green chilies (optional)

Rinse the cashews in hot water. Add rest of ingredients (except chiles) in a food processor (or industrial blender like a Vitamix). Add cashews. Process on high for 1-2 minutes until well pureed. Pour into a saucepan and stirring constantly, cook over medium heat until thickened. If desired, add chilies.

Makes 8 servings.

We cooked some Barilla plus elbow macaroni, and stirred in enough "cheese" sauce to make the consistancy that we liked. I topped the dish with buttered, toasted breadcrumbs.

The sauce itself is only
