Ok, with the cooler weather here, I'm in the mood for soup. Not just any soup, though, really good soup. What are some of your favorite recipes???

    Italian Wedding Soup
    4 ounces small egg pasta bows
    1 ½ pounds ground turkey
    1/3 cup grated parmesan
    ¼ cup bread crumbs
    1 egg
    3 tablespoons chopped fresh parsley
    ¾ teaspoon salt
    ¼ teaspoon pepper
    ¼ teaspoon garlic powder
    6 ounces baby spinach
    2 teaspoons canola oil
    4 (14.5 ounce) cans chicken broth

    I am typing this from memory, so hopefully this will make sense. Basically, you make the meatballs with the turkey, parmesan, bread crumbs, eggs, parsley, salt, pepper, and garlic powder. Brown them in a pan in the canola oil. Simmer the chicken broth and add the spinach and the meatballs, bring it to a boil and allow to simmer for 45 minutes to an hour. While it's simmering, boil the pasta (any small pasta will work for this recipe) until al dente in a separate pot, and add to the soup base when you have about 15-20 minutes left to simmer the soup base.

    Makes 10 servings; 222 calories; 18 grams protein; 11 grams fat; 80 milligrams cholesterol; 12 grams carbohydrates; 2 grams fiber; 1 gram sugar; 418 milligrams sodium

    I always throw this little super easy soup together in the winter - I eat it between meals and it keeps me super full.

    4 small cupes of chicken broth
    Celery
    Onion
    Brocolli
    A couple of carrots

    I boil it until veggies are tender then I blend it all together. It is a thick soup that makes you feel very FULL and it is very low in calories!

    If you want to add some protein, just add some boiled chicken. I blend the chicken also and it gives it a creamy consistency!!!

    Yes, Italian wedding soup is one of my favorites! I usually just throw together whatever I find for leftovers in my fridge. A good soup base is a mix of carrots, onions, and celery. (sometimes I'll have shredded cabbage) After sauteeing a bunch of that in a pan with some olive oil until soft, add whatever broth you like (sometimes I'll make my own if I have a leftover rotissiere chicken by boiling the carcass) along with some diced potato and/or sweet potato, leftover bits of meat, beans, frozen veggies. I've thrown in leftover mashed potato, chopped kale or frozen spinach, ravioli, etc. Just be sure to adjust the cooking times as you wouldn't want to have like pasta simmering for a half hour. Whatever you can find, especially if you have little bits of stuff floating around that need to be eaten. They all taste good when simmered together!

    Oh! I've been wanting to make that one, but never seemed to have all the ingredients on hand and just forgot about it. Thanks for the reminder!

    I am becoming the soup queen in our house. I like the ritual of cooking, especially when I am restricting my intake. (HA see I didnt say Dieting!)

    I bought split peas, lentil beans, and white beans. I used the recipes on the side of the bags, just subbed the pound of bacon with 2 strips and some ham cubes.

    The lentil had parsnips in it and the potassium was out of this world.

    I made a turkey Saturday. Saved the stock. Took all the meat off the bone and thought I should freeze it-then forgot. the only thing left on Mon was bits and pieces!! I decided to make soup.

    I used the turkey stock, skimmed the fat. Cut up 3 carrots, 2 ribs celery, 1 clove of garlic and put in pot with stock. Simmered for 20 min or so. Added thyme,salt, pepper, cut up turkey and a dash of curry powder. Then added whole wheat noodles that were precooked.

    My DH thought he was in heaven. It was really simple-you can even use the swanson low sodium broth to do the same thing, yummy!
