    An English dish made using cabbage and mashed potatoes (left-overs) and other bits you may choose to put in there. I've made it for my DH before--he loved it!

    It's called that because of the "bubbles' that come up in it during cooking and the noises it makes as it's cooking.

    Bubble and squeak (sometimes just called bubble) is a traditional English dish made with the shallow-fried leftover vegetables from a roast dinner. The chief ingredients are potato and cabbage, but carrots, peas, brussels sprouts, and other vegetables can be added. It is traditionally served with cold meat from the Sunday roast, and pickles. Traditionally, the meat was added to the bubble and squeak itself, although nowadays the vegetarian version is more common. The cold chopped vegetables (and cold chopped meat if used) are fried in a pan together with mashed potato until the mixture is well-cooked and brown on the sides.
  • We love it, too! We first got wind of it when we were stationed in England. Here's my favorite recipe for Bubble n Squeak:

    1/2 medium head cabbage, sliced
    3 slices bacon, diced (can use turkey bacon or even a few bacon bits instead)
    1 onion, thinly sliced
    1 cup cubed cooked ham (can be left out)
    1 tablespoon butter
    3 cups potatoes - baked, cooled and thinly sliced
    1/2 teaspoon paprika
    salt and pepper to taste

    1. In a medium saucepan, cook cabbage in a small amount of water for about 5 minutes, or until tender. Drain, and set aside.
    2. In a well-seasoned cast iron skillet, cook bacon and onion until onion is soft and bacon is cooked. Add ham, and cook until heated through. Add butter, then mix in the cooked cabbage and potatoes. Season with paprika, salt, and pepper. Cook until browned on bottom, turn, and brown again.

    It's especially good with a little Texas Pete hot sauce sprinkled on top. YUMMY!!!

    I've made it at least a couple times.

    Good with Irish Soda Bread and leftover meatloaf.
