Pork Issues When Celiac

Hello fellow MFP's!

Have any of you felt like you where "glutenized" after eating pork? The last couple times (including right now) that I've eaten it I've felt that way! I make all my own spices to put on it so I know it's not that...any ideas???

    I have celiac that wasn't cured by just going gluten free.. then I cut out dairy but still had problems. I eventually became a pescetarian (vegetarian + fish), and cut out all dairy and eggs as well. Now I seem to be functioning properly! It was really trial and error to see what I could process and what I couldn't. I wish there was some kind of test to see what we could eat and what we couldn't!
  • Iwonder if it would make a difference on what the pig was fed? I have heard that the cells retain the gluton if fed grains which then get passed onto you but you may want to verify that?

    Yeah, glazes, spices, and preservatives in ham and other meats are often secretly filled with gluten. Especially lunch meats. If you're having trouble then only buy the stuff that specifically says gluten-free on the package, even if there is no wheat or anything in the ingredients or if you've had it before with no problems. I don't have celiac but my roommate does and she's been having recent trouble so I'm also cooking/eating only gluten-free at home as to try to not poison her intestines. Not ham related, but Safeway's Eating Right brand does really great low-cal gluten free smokies. =P
