I have learned to try to keep only "good" foods on hand that i can grab instead of grabbing a box of cheesey crackers and eating from the box. I never used to even go in the kitchen to prepare something to eat for myself (my husband was a cook in a steakhouse)! Well, things change!

TOMATO and CUCUMBER SALAD

2 plum tomatoes, sliced
1/2 cucumber, sliced

spread slices in a shallow soup bowl, flat like a plate but with a rim.
sprinkle with red wine vinegar, oregano, and salt (or I use NOSALT salt substitute)

enjoy any time day or night.
