Chilli Chicken & Basil

2 Chicken breasts, diced
3 Cloves of garlic, chopped
1 Chilli, finely sliced
1tbsp soy sauce
2 handfuls fresh basil
0.5tbsp peanut oil (or oil of your choice)
1tbsp sweet chilli sauce
(makes 2 servings)

1. Mix the garlic and chilli into a rough paste.
2. Preheat a wok over a medium heat and add the oil and garlic-chilli paste (fry for 2-3 mins, take care not to burn it)
3. Add the chicken and cook until it is lightly browned (another 3-4 mins)
4. Add the sweet chilli sauce and soy sauce and continue to cook until the chicken is cooked all the way through.
5. Add the basil and some pepper and cook until the basil starts to wilt, then serve.

Each serving contains:
24g protein
160 calories
5g fat
3g carbs

A great low fat, post training meal. The chilli also helps to elevate your metabolism due to the high levels of capsaicin. Great with brown rice, in a pitta bread or by itself.
