Oatmeal Pancakes

I just made some very tasty and FILLING pancakes this morning! Regular pancakes, I find, are never filling. I was looking on allrecipes.com at oatmeal pancake recipes, and combined two to get this:
Makes 9.5 pancakes, at 98 calories per serving, or 934 calories if you were really bad and ate them all yourself!
3/4 oat flakes (I used large flake old fashioned oatmeal)
3/4 whole wheat flour
1 tsp baking powder
1/2 tsp baking soda
1/2 cup skim milk
1 tsp concentrated lemon juice
2 tsp Splenda brown sugar blend
1 egg
5 fresh strawberries
Mix milk and lemon juice in bowl.
Break down oats in food processor to make a coarse flour.
Mix oats into milk mixture and let sit at least 5 minutes (otherwise the oat bits are still hard). (If you wanted to use whole oat flakes it would still work so long as you soaked them, you would just have a chunkier pancake).
Sift together flour, baking powder and soda.
After the 5 minutes, I beat in the brown sugar blend and egg into the oats. (You could probably omit the egg, and I found they were only lightly sweet. Don't forget you're going to put syrup or jam on top when you eat them!)
Slowly mix the dry ingredients into the oats, and add water as necessary to reach your desired pancake batter consistency. Otherwise, you'll end up with just a lump of batter.
Pour by 1/4 cup onto a heated pan (I use just under medium heat on the stove), top with chopped fresh fruit, and wait until the edges are cooked. Flip, wait about 30 sec to 1 minute and remove from heat.
Top with lights syrup, jam, honey or cream, and ENJOY!

Sounds great! I've been making pancakes similar to these. Mine are a little different. I like to add 1/2 cup of cottage cheese for some more protein power! They come out nice and fluffy. Top it with some jam and nut butter, keeps me full for hours! Just the other day I enjoyed them so much for breakfast that I made them again for dinner LOL!0

I love oatmeal pancakes! I make them with nutmeg and top with no-sugar added cinnamon applesauce and the combo is delicious.0
