Grilled Eggplant?

I have looked up some recipes for grilled eggplant, and they all differ slightly, but usually use soooo much olive oil. I know it's a good fat and it shouldn't bother me, but I don't have a whole lot of calories left for the day, so I was wondering if anyone has had success using less oil or something else? I like hearing recipes straight from people, other than off of recipe websites. Also, what seasonings do you use? Any help would be greatly appreciated!

    I use olive oil cooking spray and it works like a charm with no calories!

    after slicing, try brushing with oo, and then putting on like a foreman grill. do it all the time, it's great.

    I also you olive oil spray to coat the grill and eggplant.

    I give them a light brushing of olive oil then salt & pepper. I've also cut them into chunks along with colored peppers, onion, mushrooms, zucchini... I crush some garlic and chop up some fresh herbs (rosemary, thyme but you could use others that you like) mix the cut up veggies in the oil mixture and grill. I only use enough oil to give them a little coating, they are never dripping in oil.

    If you mix the oil with the garlic & herbs and let it sit for awhile the oil will pick up the flavor. Sometimes I add in some balsamic vinegar. It makes a nice dip for bread.

    Depends what. / how you want to use them. I actually put the whole eggplant in the oven - prick a few holes, and then bake it whole..... Once cooked I then peel off the skin, and use the flesh in salads, pasta etc....

    Obviously not quite as gorgeous as the grilled eggplant most recipes with all the oil produces, but still pretty nice....

    I also just throw slices. On the BBQ - no oil - they are a bit drier, but still yummy.....

    I use plain cooking spray on each side, then season with some garlic powder and seasoned salt. Turns out excellent, without the extra cals from the OO.
