My family has been asking me to make a potato salad and a macaroni salad and I'm wondering if there are healthier options out there for homemade stuff? Or are these 2 recipe's that can't really be messed with?

I'd mess with them...leave the skin on new potatoes and toss with a light mayo or light dressing. Bring out the flavour with herbs instead of a heavy dressing. Same goes for the macaroni salad. Use whole wheat pasta, low in sodium, and again, lighten up with light mayo or other dressings. Should be some good low fat recipes online.

Use the kraft reduced fat olive oil salad dressing, and thin it with fat free milk. I add peas, onion, celetry, and diced 98% fat free ham to my pasta salad. Potato salad same thing. Just not the ham. Mustard is a "free" food so spice it up with yellow mustard in the pottato salad. Even my au gratin potatoes are made with fat free milk and only 1 cup of cheese total.

Skip them! Make a garden salad with balsamic vinegar. It'll good for all, not just you!!!!

You could make it the same way you usually do, to be honest. Just make one small change. Use light mayo instead of regular mayo. It will cut down the fat by a longshot! :) Hope that helped.
  • For the Mac Salad; try using Wacky Mac. It's a tri-colored pasta made with vegetables. Trader Joe's has a GREAT organic alternative. Use light or fat free mayo, honey dijon, celery, diced banana peppers and sun dried tomatoes mixed together for the dressing. And KEEP it cold! Heat affects the flavor and safety of the dish. Serve it in a bowl that rests on top of a bigger bowl full of ice.
