I won't be posting them all at one time but throughout the day.

1. Nutty Brownies ~ South Beach Cookbook

3/4 cup walnuts
3/4 cup granular sugar subsitute
1/4 cup unsweetened cocoa powder
1/2 tsp baking powder
1/2 tsp salt
3 large eggs, lightly beaten
1/2 cup reduced-fat sour cream
1/2 cup extra-virgin olive oil
2 tsp vanilla extract
1/2 cup bittersweet chocolate chips

Heat oven to 350 F. Lightly coat an 8x8 inch baking pan with cooking spray.
Pulse walnuts in a food processor until finely chopped. Place in a large mixing bowl; add sugar substitute, cocoa powder, baking powder, and salt. Whisk to combine.
Whisk together eggs, sour cream, oil, and vanilla. Make a well in dry ingredients and whisk wet into dry to combine.
Heat chocolate chips in a small saucepan over medium-low heat, whisking constantly to melt, about 1 minute. Whisk into batter.
Pour batter into pan and bake until a toothpick inserted in the center comes out clean, 20 to 25 minutes. Cool completely, cut into 16 squares, and serve.

Make 16 servings.... Per Serviing: 130 calories, 11 g. fat, 3 g. protein, 6 g. carbs, 1 g. dietary fiber, 100 mg. sodium

    #2 Pasta Salad

    Ingredients Calories Carbs Fat Protein Sodium Calcium
    Barilla - Farfalle (Bowtie Pasta), 1 container (16 oz )
    Early California Pitted Ripe Olives Extra Large - Black Olives (6 oz Can)
    Bertolli - Extra Light Tasting Olive Oil, 8 tbsp
    Fresh - Roma Tomato, 5 tomato
    Fresh - Red Onion, 1/2 cup

    Serves 8 Cal Carb Fat Protein Sodium Calcium
    Per Serving: 374 48 19 8 170 1





    Directions

    Boil pasta as directed on box. While pasta is boiling dice olives, tomatoes,and onion. When pasta is done, drain, rinse in cold water, drain again. Add all ingredients, add salt, pepper, or other seasonings, and serve.

    20 Minutes to Prepare and Cook


    Ingredients
    3 cups finely shredded crisp green cabbage
    1/4 cup minced onion
    1 small carrot, shredded
    1/3 cup mayonnaise
    1 Tbsp. vinegar
    2 tsp. sugar
    1/2 tsp. salt
    1/2 tsp. celery seed





    Directions
    Put cabbage, onion and carrot in a bowl.

    Prepare the dressing with the remaining ingredients and stir well to dissolve the sugar. Pour over cabbage and toss lightly. Serves 6

    #4 Bbq Chicken

    Ingredients
    1 Tbsp McCormick Roasted Garlic & Bell Pepper Seasoning Blend
    1 Skinless Chicken Breast (4.5 oz)
    2 Tbsp Kraft Hickory Smoke Barbecue Sauce

    A Preheated George Foreman Grill (or similar type grill) or a pan on a stove top @ medium-high heat



    Directions
    1. Preheat grill or stove top w/ pan to medium/high heat.
    2. Gently wash and pat dry the chicken breast.
    3. Sprinkle seasoning blend over the raw chicken on both sides.
    4. Place on grill/pan and cook for about 4 minutes, or until no longer pink on the inside.
    5. Remove from heat and place on serving plate.
    6. Drizzle the barbecue sauce over the chicken and serve.

    Thanks for sharing the recipes. I made a Ranch Veggie Dip by simply using plain greek yogurt mixed with Hidden Valley Ranch powder to taste.
