Food Sensitivites / Allergies and Dieting

I have many food sensitivities / allergies, and I've been putting off trying to diet but I'm committing myself to it now. I was tested for 49 different foods and had a reaction to 42. Some worse than others so I have to be careful with combos, and carry my epie pen with me.

Top five worst -

Dairy - (anything cow milk, even casein although I do slip in a liitle goat or sheep's milk products sometimes)
Wheat - or any sprouted grain
Strawberries
Peanuts (including peanut oil - watch out what things are cooked in!)
Tree Nuts

Medium to Low sensitivity - Chicken, cinnamon, Soy, oranges - to name a few

What I can eat - lentils, beans, Oats, Rice, Beef, Grapefruit, corn, eggs, duck eggs, most vegetables

So the problem for me is finding food I can eat. Finding things high in fiber. So maybe you all don't have all the food problems I have, but I'd love to hear how people substitute other foods to get by, especially for snacks.

Anyone?
