I got to share tonights dish with ya all...

Steak Sauce Bison Meatloaf

Ingredients
5 Slices 100% wheat bread
2 tbsp canola oil
1 cup onion, finely chopped
3/4 cup celery, ¼ inch dice or smaller
1/3 cup carrot, ¼ inch dice or smaller
1 tbsp minced garlic
3 tbsp Kraft original BBQ Sauce
2 tsp Worcestershire sauce
1/4 tsp ground black pepper
2 eggs
1/4 cup tightly packed chopped parsley
2 lbs. ground bison meat

Directions
* Slice and cube bread into 1-inch cubes
* Put bread cubes in a food processor.
* In batches, process bread cubes at high speed until reduced to crumbs (about 2-3 minutes per batch).
* Spread crumbs on a cookie sheet and set aside.

* Put oil in a medium size saucepan.
* Over medium high heat sauté onion, celery and carrot for 5 minutes, or until onion begins to soften.
* Transfer sautéed vegetables to a food processor.
* Add garlic, steak sauce, Worcestershire sauce, salt and pepper.
* Process until just blended, about 30 seconds.
* Allow to stand and cool for a couple of minutes.

* Lightly beat eggs and add to food processor bowl.
* Pulse food processor until eggs have blended in.
* Transfer vegetable/egg blend from processor bowl to large mixing bowl.
* Add chopped parsley and ground bison meat.
* Work in until everything is well blended.

* Mix in fresh bread crumbs 1/2 cup at a time.
* Keep adding bread crumbs and blend in until meat clumps and holds together easily.
* Usually 1 1/4 to 1 1/2 cups are required.

* Spray a 9 x 13 x 2 baking pan with vegetable oil.
* Put meat blend in pan and shape into a loaf that is about 10 inches long, 6 inches wide and 2 inches thick.
* Bake in a 375ºF oven for 65-70 minutes, or until an internal thermometer registers 160ºF well done.
* Remove from oven and let stand covered loosely with aluminum for 10 minutes.
* To serve, slice thickly.

Found this one to be real good...
I added a little chili paste on top before baking to give it an extra kick :)

  • Bison is Buffalo... I get the extra lean ground at my local Sobeys. It is very good and good for you, low in fat high in iron. 100 g (1/2 cup) is just 120 calories

    Yum... I had a buffalo burger at a street fair last weekend and it was delish! Your recipe sounds really good!!

    does it taste like chicken? :laugh: sorry I only ask that because whenever you ask someone how something you've never tasted is they say... hm, it tastes like chicken!

    Deer meat is not really big here....we're in corn/cow country.....but I do see the buffalo roam in the park here...OK OK, let me NOT start any myths that we still have buffalo roaming in the Midwest....:laugh:

    They are set in a fenced in park atmosphere for folks to drive by and get out of the car and say...ewwww ahhhhhh oh so big......but I have noticed there are fewer than there used to be....

    none of YOU would know anything about that now would you?:huh:

    If I get the chance I will certainly look into trying some.... sounds like a nice healthy change from..........ahhhhhh um, chicken:wink::tongue:
