Fatboy's Recipe #001
Piri Piri Chicken Skewers With Corriander Salad
This is a simple little recipe that is low in calories, it also contains no carbs and is very easy to create
Ingrediants
1/2 Skinless Chicken Breast
Piri Piri Sauce (Nando's, Sainsburys, Tescos etc etc)
1/2 Lemon
Garlic Clove
Corriander
Salt
Pepper
Salad
Lettice
Tomatoes
Cucumber
Corriander
Red Onion
Directions
Make the Marinade
1. Chop the chicken into chunks to put on Skewers and place these in a mixing bowl
2. Add the juice from the lemon
3. Add the Piri Piri Sauce
4. Add the Galic Clove (Minced)
5. Chop some fresh corriander and add to trhe bowl
6. And salt and pepper to taste.
7. Mix well and leave refrigerated for at least 1 hour.
Mix The Salad
Mix all the ingrediants of the salad together (You can use as much or as less of each ingrediant as you like, its upto you how you like your salads)
Cook
Place the chicken on the skewers, place on a baking tray and cook in the oven around 180 - 200c turning & basting with the marinade occasionally until cooked through (Roughly 20 - 30 minutes)
Serve on a plate with the fresh salad with a little Piri Piri dipping sauce (Optional)

Im with you there i like my food really hot aswell. I was trying to make it at a heat most people would like but yeah i will be adding more chillis to mine and others can as well.

4 chilli peppers, cleaned and finely chopped
juice of one Lemon
3 cloves of garlic, minced
one tablespoon of chopped fresh parsley, (optional)
one tablespoon Paprika
4 tablespoons of Olive Oil
