Pickles!

Since starting to watch my diet, I've been mainly focused on cholesterol and salt due to my blood pressure. I've seen posts where folks have talked about giving up foods and I refrain from posting because while many have given up peanut butter, pizza, etc., I've given up things like cottage cheese because they have a horrible calorie-to-sodium ratio. One of my big kicks has been modifying recipes to reduce sodium as well as calories without compromising flavor, and I can finally add back one of my favorite foods: pickles! With my loving wife's help, I made my own and they are GOOD! By my calculations, these low sodium (not no sodium) pickles are 15 calories and 222 mg sodium per ounce (better than any store bought pickle I've seen). I made both chips and spears (that's about 8 chips per ounce...way more than you need for a sandwich).

    Claussen makes dill pickles nearly the same as you make at home but they are always refrigerated. Even home made sit on the shelves like Vlasic brand preserved. I haven't given up any good foods. I try to avoid dairy because it doesn't agree with me but it is a healthy food family. Moderation not Deprivation. Life's to short to not enjoy all the things that you can to include good healthy foods.

    I eat Meijer brand zesty pickle slices (for sandwiches). Not sure about sodium count, but they are calorie free!
