Smoky Hummus

I thought I'd share, this is fantastic to make for your veggies to snack w/ or to take to a party or whatever! :happy: Please will love you for it.
2 cans of chick peas/Garbanzo beans
2 Tbsps of Olive oil *i use extra virgin
6 sundried tomatoes (drained, but I usually buy from Schnucks and there is no draining needed when you buy in the bag in produce section)
¼ cup fresh lemon juice (or bottled lemon juice is fine)
2 cloves of fresh garlic
½ cup of fresh cilantro chopped
¼ cup tahini (sesame seed paste)
1 (7 oz) marinated roasted red pepper (can be found in a jar in the pickle section)
½ cup of water
½ tsp salt
Fresh ground pepper to taste
1 ½ tsp cumin
1 chipotle pepper, preferable in adobo sauce (can be found in a pop top can in the aisle at schnuck’s w/ different ethnic seasonings)
You will place the garbanzo beans, water, tahini, lemon juice, olive oil, chipotle pepper, garlic, and cumin in food processor or blender. Add the red peppers, sun-dried tomatoes, cilantro, salt and pepper. Pulse the mixture until ingredients are coarsely chopped into the hummus base. Transfer to serving bowl.

I agree this a an amazing recipe!
I have started leaving out the tahini because it seems to go bad quicker than I use it. It is extra calories BUT it is a really good fat.0 -
Really? That's odd b/c I bought mine in this jar at Schnuck's, it was pricey, but i have used it 5 times or so, have another serving left probably. And I purchased it like 4 months ago. It's still good! I usually just make the hummus once or twice a month. But the tahini is still great in the jar. its in a paste consistency.0

I use a slimming world recipe for hummus which is really low cal, tasty too!
can of chickpeas
juice of 1/2 lemon
clove of garlic
2tblsp natural low fat yoghurt
season with chilli powder and cumin - approx 1/2tsp each or less if like less spicy
blitz together! no oil!0 -
yah last time i made my hummus i forgot the oil and i didnt even notice so you actually could leave it out if you wanted :happy:0
