Bread Pudding

I absolutely love bread pudding. My sister used to make it for me all the time, but it had tons of sugar, butter, whole milk, and eggs. I tried a low cal version last night. It's not quite as good as with all the bad stuff in it, but it was enough to cure my craving. I'm going to try it again with some alterations.

I just made two servings, since if i made a full batch, i would eat the entire thing! (no self control)

4 slices low-cal bread
1 cup skim mils
1/2 cup egg whites (i use egg beaters egg whites in the carton)
2 tsp vanilla
2-3 packets splenda or truvia
cinnamon and nutmeg to taste

Tear up 2 pieces of bread each into two small oven safe dishes (I just used a couple of thick ceramic cereal bowls i have). Mix up milk, egg beaters, vanilla, sweetener, and spices and pour over the bread and allow to soak in. Bake for 20-25 minutes or until it's a little firm and browned on top. You could also add raisins or chopped apples, or maybe some sugar free caramel syrup or a few chocolate chips. You could spice it up in lots of ways, but with the recipe i used it's only 143 calories per dish.

This is great comfort food!
