I made this on Saturday and it was fanfreakintastic!

1 tblspoon olive oil
1 onion diced
Minced Garlic to taste
64 ounces of low sodium chicken broth
3 boneless skinless chicken breast (boiled and shredded)
1 jar picante sauce
1 can yellow corn drained
1 can black beans drained

Add olive oil to pot and heat for a minute, add onions and stir until onions are cooked, add chicken broth and all the rest of the ingrediants and let boil for a few minutes, turn heat to low and let simmer for about 15 minutes and then enjoy!

It is SUPPPPPPPPPPPPPPPER good and SO easy to make!

I make a similar concoction but instead of picante i use rotel hot and a 4 oz can of jalepenos!

    Perfect for those cold nights!!

Also good garished with avocado and cilantro:drinker:
