Low-cal Crunchy Taco Salad
Options
This is a very satisfying dinner for about 350 calories & a very large serving size. The cabbage/carrot crunchiness really satisfies my crunch texture craving.
2-3 cups pre-packaged Coleslaw mix (the kind without the dressing) (~30-40 cals)
1/3 cup pinto or black beans (~65 cals)
5 oz grilled chicken breast (diced) (~140 cals)
6+ Tbsp Salsa (~30 cals)
2-4 Tbsp Light Sour cream (I like to add onion soup mix to my sour cream for an added flavor depth) (~80-120 cals)

Sounds awesome! I usually have something similar to this just over lettuce...but I love the idea & crunchiness of using coleslaw mix! Thanks, I will definitely try this!0

I've been mixing sour cream with greek yogurt to save on cals and fat. Still a high yum factor.0
