I am going to make some for the weekend. I am going to use

Avocado

Its uncooked and nothing but those ingredients are included. I may even forego the tortilla chips....

Absolutely! It's one of my favorite healthy summer items! And, I just eat it by the spoonful. (Always have... it was only a few weeks ago that I found out most people put it on chips or a tostada or something, LOL.)

As long as you get good quality fish and shrimp you should be fine. Civeche is very healthy, but I live in a land locked state I wouldn't dare try it with fish that has been shipped in.

yes! Definitely. One of my favorites! I live a couple blocks from a taco stand that makes the best ceviche, and I eat it all summer :) (no chips!)

Well thanks everyone. I figured it was but lately my way of thinking had been, if it tastes this amazing it cant be good..lol

to make it, just cut the shrimp and fish into small cubes and put it in a bowl. I then put the juice from the limes in a bowl and refrigerate it for 4 hours.

Mean while I chop (cube) the tomatoes
Finely chop the cilantro and peppers
    Chop up the Onions
    Chop up the avocado

After 4 hourse I add the rest of the ingredients, mix well and refrigerate overnight. (You dont have to, I just like to give it time to "bond" the flavors)

As far as amounts it all depends on you. If you like a lot of tomatoes, put alot in. Not crazy about Serrano peppers or cilantro? (you MUST be crazy), then dont add.

Some people also add tomato juice and make it almost like a cold soup (Gaspacho-ish?)

It's healthy, but I only make it with the freshest seafood I can find. Since your not techically cooking it, you want to be sure that the fish has not had a chance to accumulate bacteria.
