MSarro's Vegan-Friendly Rice and Beans
This recipe is a modified version of my housemate's recipe. It makes a *TON* of food, enough to easily feed a whole family for at least two days (if you can keep yourselves from eating it all). When I make it it fills a gallon sized ice cream tub to the top.
Ingredients:
*Rice
2 cups dry rice
3 cups water
*"Meat" and bean mix
1 12oz package of boca ground burger crumbles
2-3 cloves garlic
2 tbsp shallots (or onions)
2 packets goya sazon culantro y achiote seasoning
2 tbsp olive oil
1 tsp cayanne chili powder
1 can kidney beans (or other beans, the nutes are calculated with kidney because its what we have on hand the most)
Rinse the rice with water until the water pours off clear. If you're using a rice cooker, add the rice along with 3 cups of water and hit cook. If boiling the rice, follow instructions (I love my rice cooker! lol)
Next, take a large frying pan and add the two tablespoons of olive oil. Put on a low~medium heat. Finely chop up the garlic, and shallots, and set them aside along with the cayanne pepper.
Open the can of kidney beans and drain. Rinse them numerous times until the water pours off mostly clear.
Run your hand under some water, and flick it at the oil in the frying pan. If the oil hisses/pops from the water, its ready.
Add the garlic/shallot/cayanne mixture to the pan. Let it brown for a minute or so, and then add the boca and kidney beans. Lower the heat a little.
Once the boca is completely thawed and cooking, add the two packets of Sazon and stir gently. When the whole mix is hot its ready (you may need to add water about a shotglass at a time to keep it from burning on the pan).
Dump your rice into a large bowl, and then add in the meat/bean mixture. I usually use a rice paddle to fluff it in and mix. Enjoy!
Nutes (calculated for 6 *big* servings so its a bit high):
