An extra special recipe from the Southwest:

Ingredients

2 lbs Lean Ground Beef (or Turkey)
1 16 oz can Tomato Sauce
2 cans corn (undrained)
1 cup Yellow Cornmeal
3 tbsp Chili Powder
2 cans Black Olives
2 cups Shredded Cheddar Cheese


Directions

1.Brown and Drain Ground Beef (or Turkey)
2. Add in Tomato Sauce, Corn (add in liquid), and Cornmeal. Simmer 10 min.
3. Stir in Chili Powder and Black Olives. Stir until well blended making sure meat mixture goes into the center of the olives.
4. Pour mixture into a casserole dish. Add cheese to the top and place in oven.
5. Bake at 325 for 20 min until cheese is melted on top.
Serving size 1 1/2 cups, Serves 8.

    That sounds good. I would have to omit the olives though.

    This is my husband's favorite meal (always requested for his birthday meal) and he HATES olives. The rest of us love them, so he picks his out and loves it.

    we made this last night. i added 2 small cans of diced green chiles and a LOT of cumin and some Mrs. Dash. i also used shredded jalapeno jack cheese too, it was WAY tasty.
