warm puy lentil salad

Just made this for lunch and it was fabulous!

Sautee some shallots and garlic in a little olive oil.
Add in some cooked puy lentils (I used a 400g tin, drained and rinsed)
Stir to keep warm, season with black pepper and a little sea salt.

In a large bowl mix some cherry tomatoes (i used 3 red, 3 yellow), some goats cheese (about half a log, chopped into large dice), some fresh mint leaves, torn, a good glug of balsamic vinegar and a good glug of EVOO.

Stir in the warm lentils and mix gently. Top with a couple of tablespoons of small walnut pieces.

I'll work out all the calorie and nutritional info later, but stacks of protein, and a very adaptable recipe - different cheeses such as feta or haloumi would be great alternatives, and leftovers for lunch are lovely.
