Annie's Green Chili, Chicken & Cilantro Soup
Ingredients:
6 cups Homemade - Organic Chicken Broth
Cooked chicken Breast - Boneless and Skinless (or chicken from the whole chicken (I prefer a mix of breast meat and dark)
Ortega - Whole Green Chilis, Original Fire Roasted Chilis, 4 oz. (you can add more if you like it with a bit more fire)
Muir Glen Organic - Fire Roasted Diced Tomatoes With Green Chilies, 1 or 2 cans
Shredded Cheese - Mexican Blend, 3 cups (you can use cubed medium or sharp cheddar cheese instead)
Fresh - Cilantro, 1/2 cup
sour cream dallop, crushed tortilla chips or sliced avocado for topping
~ heat your chicken broth (mine is made with onion, garlic, ground cumin, fresh garlic, salt & pepper so add these spices if not already in your broth) until simmering.
Add the first 4 ingredients.
~~ In a food processor add 2 cups of hot broth, then add cheese and process until completely smooth. Pour cheesy liquid back into pot of all the broth and stir.
Add chopped cilantro.
Cook about 20 minutes stirring fairly often to keep cheese from separating or sticking.
