Easy Delicious 5 minute Dinner 224 calories)
As I was cleaning out my fridge and trying to decide what to make for dinner I got inspired. I took some left over chicken, fresh asparagus and baby yellow potatoes; chopped them into bite size pieces. Threw them in a microwave streamer bowl with a little butter and citrus basil seasoning. Cooked it about 3 minutes. Had I actually chopped the potatoes before I cooked it would have only taken about 1-11/2 minutes to cook. Since I didn't chop them I cooked them for about 2 minutes then added the chicken and asparagus and chopped for 1 more minute. Not only was it easy and quick it was delicious. As I was eating it I was also thinking of all the ways I could change it up. It could be as easy as changing the seasoning, or adding onion, mushrooms, zucchini or any other vegetable. You could also use olive oil instead of butter and just mist a little on.
