What did/are you having for dinner tonight?

I've got a chicken roasting in the oven with some potatoes for the husband & green beans.

    Chicken enchiladas. I boiled a chicken earlier with green chiles and salsa. Shredded it. Added minced onion and roasted green chiles. Rolled in corn tortillas, covered in green enchilada sauce. Topped with a bit o' cheese.

    And sauteed matchstick zucchini.

    Yum.

    I had grilled chicken with duo romano beans and multi colored pepers.. only 315 calories .. yum

    some inventive Atkins chicken salad of my own design!...lol...it has cubed cheddar cheese, diced tomato and avacado, bacon crumbles(home-made), chicken breast chunks and mayonnaise!...with some raw celery on the side...it's actually reallly good!

    I made a yummy lasange,

    Roasted pumpkin and mashed it with light ricotta cheese and pasley.
    Then layered whole wheat pasta sheets (I make my own but you can buy em ;)), Pasta, pumpkin mix, spinach, cottage cheese. Repeat.
    Sprinkle some parmesan on top and bake at 180 C for 30 mins. Makes six serves at 197 cals per piece, or double serves if your hungry :)

    London broil potato salad with ff mayo and a green salad.
