need quick fit and healthy dinner ideas. i'm not much of a cook and don't have that much time in the evenings to fuss in the kitchen anyway. I don't have to cook for a family anymore either. Just looking for some quick meal ideas!?!

OMG that sounds delicious. I think i'll make that tonight along with some chicken and steamed veg0 -
At Meijer I found grilled chicken breast stuffed with broccoli cheese. They're 180 calories a piece! It's about a 4 ounce size chicken breast, but take an hour to cook. They're totally worth it though
Half the time I'm strapped for time in the evening and end up with a slimfast/protein shake, haha.0 -
I like baking, grilling, broiling big batches of lean protein (chicken, fish, etc) to be able to use during the week (and/or freeze some). Then each night, you can just steam or roast some fresh veggies to eat with it. And then you can change it up by throwing it all over some fresh spinach for a salad, dice up and toss in a skillet for a quick stir fry, wrap in a whole wheat tortilla or wrap for a taco or burrito, etc.0

Last night I had chicken cubes fully cooked already in the bag from Krogers.. I added frozen peepers and duo romano beans.. you can add any vegetable.. just took me 6 mins and I was done.. and just alittle over 300 calories0

Grilled chicken with salad is good. Baked potatoes, pasta (in moderation), stews - just chop some meat and veg and bung it in the oven with a sauce.0

Or, instead of chicken, you can brown up some lean ground turkey, beef or pork and season with taco or chipotle seasoning... put that over the baked po with a sprinkle of cheese, diced toms & a dallop of greek yogurt (or light/fat free sour cream). veggies on the side. yum yum yum!0 -
The other night I made dinner in about 5 minutes (cooking and prep included). I had some leftover chicken, asparagus, baby yellow potatoes. Chopped them into bites size pieces, threw them in a steamer dish with a little butter and citrus basil seasoning. Cooked it for about 2 minutes. It was delicious. It is very versatile. If you don't like asparagus use a different vege or add other veges. You could do shrimp instead of chicken. Change out the seasoning. use olive olive instead of butter. It was so good I did it again the next night.0

On Sundays, I love getting a roaster chicken from the grocery and just pulling the meat off of it, shredding it, and prepping some sliced/chopped veggies (and keeping them in containers in the fridge) can help for easy meals, whether it's a salad, soft tacos, etc.... one chicken usually lasts me about 4 or 5 meals if the husband doesn't have any.0

My go to quick meal is brown rice and stir fry. The entire meal can take about 20 min. If you buy your veggies pre-cut it can take only 10 min. Either use instant brown rice or cook a large amount and keep in the fridge for days.
Also, just about any type of fish can be grilled or sauted in 10 min or less. Then just quickly sauted some sugar snap peas, asparagus, greens or other quick cooking veggie for a side dish. If you have a George Forman type grill that can cut cooking time for meats and fish in half.0
