    I miss my morning MIM. :sad: After having my gallbladder out, I need to watch my fat intake, so can't eat low carb any longer.

    Flax meal is ground flax seeds. You can either buy your own and grind it or purchase it at places like Trader Joe's or Costco. Costco has a better price because you're buying a larger bag, plus it's cold milled so doesn't need to be refrigerated.

    You can experiment with a lot of different flavor combinations in the muffin. Extracts (almond, orange, lemon, etc.) are good for no calorie flavor. Granulated onion and/or garlic are nice for a savory muffin.

    sfoust- my sister had hers out too but as long as she takes a psyllium supplement daily she has no problem with the fat of the low carb diet. The flax muffins actually help her deal with every day good fats. She uses Trader Joe's in capsules and takes one with higher fat meals this has really helped.
