Favorite Breakfasts
What are some of your favorite breakfasts? I am looking for two types: make ahead for when I have company staying the night and don't want to spend all the next morning in the kitchen, and ones that will be portable to be taken to work.
To start out the swapping.... I tried a new pancake recipe, and we just loved it so, I thought I would share. This is from a cookbook called Farmer's Market Favorites, and called Grammy's Overnight Pancakes. This is the original recipe cut in half. It looks a little complex at first, but two thirds of it is make ahead, so it is pretty easy. I am even thinking of keeping a few baggies of the flour mixture made up in the pantry.
Mix one cup buttermilk (or add 1 tbs lemon juice to milk and let set)
and one cup mixed oats. Set in fridge overnight.
Mix 1/4 c white, 1/4 c wheat flour, 1/2 plus 1/4 tsp each of baking soda and powder, 1 tbs sugar, 1/2 tsp salt. Set aside.
Morning: melt 1 tbs butter and mix in one egg. Stir into oat mixture. Add in flour mixture. If they it is too thick, add butter milk one tablespoon at a time until they reach the right consistency. Scoop onto griddle (spray or butter lightly first with 1/4 cup measuring cup; this makes 12 pancakes about 6' across. They are absolutely delish, and come in at 76 cal, 12 carb, 2 fat, and 3 protein (grams) ....but super delicious! We ate them topped with fresh fruit . I am also thinking of making a big batch and freezing some; then on busy mornings I can throw them in the toaster....spread with PButter or cream cheese and mashed fruit...mmmmm...

Favorite portable is chocolate Shakeology with banana, almond milk, and peanut butter. Takes about 3 minutes to mix up.0

I currently really enjoy Presidents Choice Crunchy & Creamy yogurt, it comes with granola and is super portable. Yummy! One of my other favs is scrambled eggs with deli or homade salsa.0

For breakfast for company, we love Ham and Eggs Ahead! I'm not sure on the nutritional value, but you line the bottom of a 9x13 with bread soaked in an egg, milk, and nutmeg mixture, layer that with ham and velveeta cheese slices, repeat the bread on top, and put a thin layer of corn flakes or rice crispy treats on top of the bread. Drizzle on about 2 or so tablespoons of butter to make the cereal crispy.
One pan can feed about 8 or so people if I remember correctly. We usually make 2 for Christmas morning. It's amazingly yummy and you can make it the night before and put it in the fridge. I couldn't find the recipe online, but I can post it when I get home tonight! :happy:0
