Goat's Cheese Salad with Basil Pesto
So here’s what you need:
75g of Salad leaves (As you prefer, Mixed leaves, Iceberg, etc, anything works really) (13 cal)
1 Medium Tomato sliced (35 cal)
1/4 of a Red Onion diced (16 Cal)
10g of Red Peppers diced (3 Cal)
20g of Green Peppers diced (4 Cal)
10g of Yellow Peppers diced (3 Cal)
50g of Cucumber diced (8 cal)
20g of Organic Basil Pesto (I use Sacla and it’s great, but you can make your own it’s quite easy) (88 cal)
30g of Semi Soft Goat’s Cheese diced and mixed (109 cal)
15g of Black Olives (22 Cal)
You'll have a delicious lunch for only 301 calories.
If you're a big guy like me that needs some extra fuel to keep you going I'd suggest a high protein sandwich, today I had a Tuna and Sweetcorn Sandwich on Wholemeal bread.
1 can of Weightwatchers Tuna & Sweetcorn on Mayonaise (77 cal)
2 Slices of Dunnes Gold Wholemeal Bread (94g – 188 cal)
Total Calorie intake: 265 Calories
