Family of 7 healthy dinner ideas?

Hi All!! I am trying to build a monthly dinner plan for a family of 7 +... neighbor kids and guests.. With this kind of brood I have to shop wise, eat wise and be sure to cover all my bases... A little background in hopes of as much help as possible:

The PICKIEST eater?? My husband (who doesn't and doesn't seemingly have to watch his waste line)
We don't buy or eat alot of red meats (maybe once weekly)
We don't eat pork but maybe once a month
We also don't eat meat on the bone.

Any ideas?

    I make this easy dish on a weekly basis. This is only for 2 of us but you could definitely make it larger! It's very simple and should please everybody!

    6 ounces Whole grain pasta (I usually use thin spaghetti or angel hair but you can use any kind. I've also used whole grain shells, yum!)
    2 tbsp olive oil (any type)
    4 tbsp of garlic (more or less depending on your taste, I love garlic!)
    2 tbsp grated parmansan cheese

    I saute the garlic in the olive oil until the garlic is light brown. Then I mix it together with the cooked pasta, top with cheese and serve! I generally cook the pasta at the same time as the garlic because once the garlic is cooked the hot oil keeps cooking it after it's off the flame so it's important to time it right. My husband and I eat this all the time!

    Roasted baby red potatoes or mashed potatoes
    Brown or wild rice cooked in low sodium chicken broth
    Quinoa or Couscous
    Whole wheat pasta with a small amount of butter and parmesan cheese

    Dessert ideas
    Pudding cups (there are some tasty fat free or sugar free varieties)
    Fresh berries and cream or cool whip
    Baked apples drizzled with a touch of honey or real maple syrup
