I have zucchini and yellow squash and my husband wants a pasta dish for dinner. Does anyone have any suggestions of what I can make for dinner tonight? Thank you!

cut up the zucchini and squash and cook it in a little olive oil, then add in a can of diced tomatoes, season however you'd like, and eat over pasta with a little parmesan! Oh yeah, and put onions in it too0

Or "make pasta" with the zucchini. Use a carrot peeler to make long slivers of zucchini "noodles", cook them, and top with chicken and sauce. It's delicious.0

My fiance and I use squash in place of noodles! Cut 'em Julienne style, or with a peeler, and toss 'em in a pan with a little olive oil. Yummo! Or if you don't wanna use all veggies, use half pasta, half veggies!

Ingredients
3 cloves garlic, chopped
1 white onion, chopped
1 tablespoon butter
1 tablespoon vegetable oil
2 zucchinis, thickly sliced
2 yellow squash, thickly sliced
salt and pepper to taste
1 pound angel hair pasta
1 (28 ounce) can crushed tomatoes
Directions
1.In large skillet, over medium heat, saute garlic and onion in butter and oil about 2 minutes. Reduce heat, and layer zucchini and yellow squash slices on top of onion and garlic. Add salt and pepper, cover and steam 10 minutes, or until squash is tender.
2.While vegetables are steaming, bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain. Add the crushed tomatoes to the zucchini mixture, stir and heat slightly, but do not cook the tomatoes. Serve the zucchini sauce over the pasta.
I like to add some Italian Turkey Sausage, good AND better for you than ground beef!0 -

This is EXACTLY what I was going to suggest - it's fantastic!!0 -
Stay away from the pasta. If you slice the veggies longwise, put in a pan and add teriyaki and a little soy sauce, some garlic salt, sautee just till they are a soft crisp they are delicious....I don't use any oil! Or you can marinade in that and grill. Very yummy.0

@walkwithme1, sounds delicious, just be careful of your salt with the teriyaki, soy sauce and garlic salt0
