Need a recipe for a vegetable bake please....

Im going to a friends for tea tomorrow and we are going to do stuffed chicken breast and vegetable bake..... great idea i thought, nice and healthy... that is if we can actually make one. Neither of us have done a vegetable bake before so could you please help me out and give me some ideas

My favorite, especially this time of year, hit up the local farm stand and get:
Zucchini
Summer Squash (aka Yellow Squash)
Onion
Tomatoes
Slice up the veggies into discs.
Layer just like listed above and season how you see fit (I use season salt, black pepper & garlic powder)
Sprinkle Shredded Fat Free Mozzarella cheese on top.
Do this to make 2 layers.
Bake at 400, covered for about 20 minutes. Remove cover and cook for another 5 minutes uncovered to brown cheese on top.0 -

I slice everything in disc form. I use a mandolin. But I don't see why you couldn't dice them up.0

what about sauces for the bake? i thought it was suppose to have a sauce thing?0

No sauce needed. :happy:
A mandolin is a kitchen tool that I use to slice up my veggies. (or cut my finger, if i'm not careful)0
